Bluefish with Grilled Vegetables

bluefish fillet

milk

Lemon
juiced and mixed with ¼ cup melted butter
Salt and pepper
Grilled Vegetables

Lemon
juiced

Eggplant
peeled, cut in half moons

Zucchini
cut in half moons
1
Yellow squash
cut in half moons

Red onion
sliced

Red pepper
cut in squares

thyme
chopped

olive oil
Salt and pepper
Instructions
Soak bluefish in milk for 20 minutes. Drain and pat dry.
Season the fish with salt and pepper.
Grill 8-10 minutes per side, brushing with melted butter and lemon juice.
Toss veggies with salt, pepper and 2 tablespoons chopped thyme, ¼ cup olive oil, and the juice of one lemon.
Grill vegetables 3-5 minutes per side. Toss back in saved veggie marinade. Serve with grilled bluefish.
