Spinach and Goat Cheese Baked Egg Muffins

goat cheese, crumbled

baby spinach with stems removed
Instructions
Pre-heat the oven to 375 degrees.
Pre-coat a muffin pan with butter.
Whip together the eggs, cream, salt and pepper.
Place spinach leaves into the buttered muffin pan.
Pour the whipped egg mixture into the muffin cups ¾ of the way full.
Top with approximately 2 oz. of goat cheese per muffin cup.
Bake for approximately 12 minutes.
Remove from oven and let rest for approximately 3 minutes, then serve.
