Hugo • 5% ABV
West Coast Pilsner brewed with 100% Rabbit Hill malt. Hugo is decoction mashed and appropriately hopped with Saphir, Motueka, and Krush.
Fritto Misto
Oishi shrimp, local scallops & calamari with a tonnato sauce
Second Course
Festbier • 5.7% ABV
Festbier brewed with 100% locally grown and malted Rabbit Hill Farms Chillum, Munich, and Pilsner malts. An extended single decoction and ample hop additions of Magnum, Mittelfrüh, and Saaz balance the complex malt profile.
Hickory Smoked Honeynut Squash
Red quinoa tabouli, Apicius spices, pineapple & almond emulsion
Third Course
Perfectly Cromulent IPA • 6.2% ABV
American IPA brewed with 100% locally grown and malted Rabbit Hill Farms Pilsner, Chillum, and wheat malts. Decoction mashed, appropriately hopped with Motueka and Citra in the kettle, and generously dry-hopped with Citra, Motueka, and Citra Cryo.
Pastrami-Spiced Berkshire Pork Shank
Shiitake mushroom chutney, celeriac purée, arugula, date & cashew pesto
